Community Supported Agriculture (C.S.A.) Listings for 2010

Using Your Garden's Vegetables, Week 3 -- Crustless Zucchini Pie

Here's a great recipe that uses fresh zucchini!  Delicious for lunch, brunch, or for a light dinner.  Leftovers can be served warm or cold.  Try it with salsa! 

Crustless Zucchini Pie
Makes 2 pies, 6 servings per pie

1 large onion, chopped
1/2 cup canola oil
1/2 cup grated Parmesan cheese
4 eggs, beaten OR 1 cup egg substitute such as Egg Beaters
1 Tablespoon fresh parsley, minced
3 cups grated zucchini
1 cup Heart-Smart Bisquick
1 cup (4 ounces) grated Cheddar cheese OR low-fat Cheddar cheese

Using Your Garden's Vegetables, Week 2 -- Emily's First Tomato Soup

Now that the weather is starting to cool off a bit, here's another great soup recipe featuring fresh tomatoes!

Emily's First Tomato Soup
Serves 4 to 6

2 Tablespoons olive oil
1 cup diced onions
5 pounds ripe red tomatoes
1/2 teaspoon sugar
1 bay leaf
1 teaspoon salt
1/2 cup water
Freshly milled black pepper, to taste

Soup toppings (optional)
Freshly grated parmesan cheese

Using Your Garden's Vegetables Week 1 -- Gazpacho

Now that the harvest is in full swing, here's a great recipe that uses fresh tomatoes, cucumbers, and green bell peppers.  It's quick, delicious, and very refreshing on hot late summer days!  Please note:  Gazpacho does need to be made ahead of time to give the flavors time to meld.

Interesting Facts about Fast-Food "Sweet Tea"

As you've probably read, heard, or seen, a national fast-food chain is promoting it's "Sweet Tea" for the summer.  Here are the nutrition facts for the Large (32 ounce) serving :  230 calories, 59 grams of carbohydrates.  No wonder they call it "sweet" tea -- it contains the equivalent of nearly 15 (yes, you read that right fifteen!) teaspoons of sugar.  A better idea -- order a plain, unsweetened tea and ask for a packet (or 2, if you like) of sugar.  Each packet of sugar is about 15 calorie...

Summer Fair!

Asparagus!
